Mahi-Mahi Cooked in Banana LeavesServes 8
Eight 6 to 8 oz. fresh mahi-mahi fillets 1 ginger root 1 red or yellow pepper 1 bunch scallions 1 cup vegetable oil 1 tbsp. red curry paste 2 limes, zest and juice 1 large bunch cilantro, chopped 8 pieces banana leaves wrapper
Finely dice the ginger root and the pepper. Cut scallions ¼-inch thick.
In a sauté pan, heat the oil, add the ginger, and cook 1 minute. Add the pepper and curry paste, cook and stir about 2 minutes. Next stir in the scallions; cook another minute, then add the lime zest and juice. Finish cooking a final minute.
Remove from heat, pour into a bowl, and let the paste cool before adding the cilantro.
When ready to assemble, place the banana leaves on the table. Spread each fillet with the spice paste. Place one fillet in center of each leaf and fold like an envelope.
Cook in the oven, in a steamer or on the grill.
To serve, open the banana leaves and serve as is.
